The bovine lung is completely low in carbohydrates and has a high protein content. It is delivered to us directly after slaughtering the cattle and cut by hand into fine pieces of approx. 0.5 grams each. We dry them gently for 48 hours in a drying apparatus. On your request, the pieces can be cut larger or smaller (for orders of 1 kilogram or more). It is also very rich in vitamin C.
